The burning & refining
Drinks with a higher alcohol content than 15% only became possible after Arnaldus de Villanova brought the secret of distillation back to Europe from a crusade. Distillation separates liquids that are easier to evaporate from liquids that are harder to evaporate.
No two firing processes are alike. The intuition of the master distiller and his experience are an essential factor in the quality of the fine brandy.
Firing takes place in two passes. The raw fire (also called the rough fire) is the result of the first firing process. It is fed unchanged to the second firing process.
The basis for our fine spirit compositions
From the second distillation process can be obtained already drinkable brandy. For this purpose, the middle spirit of the first pass is heated evenly over a long period of time and the drinkable middle spirit is taken from it until, at the discretion of the master distiller, it is transferred to the post-distillation. The middle brandy or run corresponds to the 96% fine brandy, which is unsurpassed in its purity and quality. This fine brandy is the basis for all noble fine brandy compostions of our assortment.
Our Edelkorn is created by spindling (reducing) the fine spirit to an alcohol content of 38.5% .
With subsequent storage in oak barrels, we give our noble grain about a year to develop its full aroma in smell and taste and to mature into an unmistakable pleasure.
The firing process
The noble liqueurs and bitters are then created by adding fruits, herbs and spice mixtures according to traditional recipes and renewed storage in oak barrels.
